Moroccan Lentil Soup with Warm Spices and Herbs

Moroccan lentil soup with brown lentils, vegetables, herbs, and warm spices

This Moroccan lentil soup combines brown lentils, tomato, vegetables, and warm spices in a fragrant, satisfying broth. Blooming the cumin, coriander, paprika, and cinnamon in oil brings out their fullest flavor before the lentils simmer.

The recipe makes 6 servings and takes about 45 minutes, including 10 minutes of preparation. The brown lentils need no soaking; rinse them well and cook until tender-but-intact.

Moroccan Lentil Soup: 1½ Cups Brown Lentils, Vegetables, Tomato, and Spices

Gather the following ingredients before cooking:

  • 1½ cups brown lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 can (14 to 15 ounces) diced tomatoes
  • 2 teaspoons ground cumin
  • 1½ teaspoons ground coriander
  • 1 teaspoon sweet paprika
  • ¼ teaspoon ground cinnamon
  • 6 cups vegetable stock
  • 1 bay leaf
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh parsley
  • 2 tablespoons fresh lemon juice

Brown lentils hold their shape better than red lentils, giving the soup a hearty texture. If your vegetable stock is heavily salted, wait to add most of the salt until the end.

Bloom 2 Teaspoons Cumin, 1½ Teaspoons Coriander, 1 Teaspoon Paprika, and ¼ Teaspoon Cinnamon

  1. Warm the olive oil in a large, heavy-bottomed pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 6 to 8 minutes, stirring occasionally, until the onion softens and the vegetables begin to sweeten.
  3. Stir in the garlic, tomato paste, salt, and black pepper. Cook for 1 minute, just until the garlic smells fragrant and the tomato paste darkens slightly.
  4. Add the cumin, coriander, paprika, and cinnamon. Stir constantly for 30 to 45 seconds. The spices should become aromatic, but they should not scorch.
  5. Pour in the diced tomatoes and scrape the bottom of the pot to release any browned spice mixture.

Cooking the spices in the oil before adding the liquid is the key flavor-building step. Keep the heat at medium; burnt spices will make the broth bitter and cannot be corrected later.

Moroccan Lentils: Simmer 30–35 Minutes in 6 Cups of Vegetable Stock

  1. Add the rinsed brown lentils, vegetable stock, and bay leaf to the pot. Stir well to distribute the vegetables and spices.
  2. Raise the heat and bring the soup to a gentle boil. Immediately reduce the heat to maintain a steady, uncovered simmer.
  3. Simmer for 30 to 35 minutes, stirring every 8 to 10 minutes so the lentils do not settle or catch on the bottom.
  4. Begin checking at 30 minutes. The lentils are ready when they are tender in the center but still hold their shape. This tender-but-intact texture keeps the soup hearty rather than mushy.

A hard boil can split the lentils and make the vegetables disappear into the broth. If the lentils remain firm after 35 minutes, continue simmering for 5 minutes at a time. Add a small splash of water or stock if the pot becomes too thick.

For a thicker, more satisfying consistency, scoop about 1 cup of soup into a bowl and mash the lentils and vegetables with a fork. Stir the mixture back into the pot while leaving most of the lentils whole.

Finish and Serve with Herbs, Lemon, and a Tender-But-Intact Texture

Turn off the heat and remove the bay leaf. Stir in the cilantro, parsley, and lemon juice. Taste and adjust the salt, pepper, or lemon juice until the broth tastes bright and balanced.

Let the soup stand for 5 minutes before serving. It will thicken slightly as it rests. If it becomes too thick, loosen each portion with a splash of hot stock or water. Serve these Moroccan lentils warm, with extra herbs and lemon wedges for the table.
