Cauliflower and Cheese Soup: Cook in 4 Cups of Broth

  1. Warm the butter or olive oil in a large, heavy-bottomed pot over medium heat.
  2. Add the onion and cook for 4 to 5 minutes, stirring occasionally, until soft and translucent. Do not brown it heavily; gentle cooking keeps the soup’s flavor clean.
