Okra and Tomatoes Recipe: Savory Sautéed Vegetable Side

Sautéed okra with tomatoes, onion, and garlic in a skillet

This okra and tomatoes recipe makes a savory vegetable side with lightly browned okra, juicy tomatoes, onion, and garlic. Sautéing the okra first helps reduce slipperiness while keeping each piece intact.

The recipe yields four servings and takes about 15 minutes to prepare, plus 18–22 minutes to cook. The sauté-first order also works well for other okra and tomato recipes when you want a firmer texture.

Okra and Tomatoes Recipe: Ingredients and Okra Preparation

Gather the following ingredients before heating the skillet:

  • 1 pound fresh okra, trimmed and cut into ½-inch rounds
  • 2 cups chopped tomatoes, fresh or canned
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 tablespoons neutral oil, such as canola or avocado oil
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika, optional
  • 1 teaspoon apple cider vinegar, optional, for finishing

Rinse the okra briefly, then dry it very well with a clean towel. Excess water creates steam and can make the finished dish softer and more slippery. Trim the caps and tips without cutting deeply into the pods. Slice the okra crosswise into even ½-inch rounds.

Sauté the Okra Over Medium-High Heat Until Lightly Browned

Place a wide skillet over medium-high heat. Add the oil and heat until it shimmers but does not smoke. Add the okra in one layer, working in batches if necessary. Crowding the pan traps moisture and prevents browning.

Cook the okra for 6–8 minutes, stirring every minute or two. The pieces should develop lightly browned edges and look drier on the surface. A few browned spots are desirable. If liquid collects in the skillet, keep cooking until it evaporates before adding the other vegetables.

Add the diced onion and cook for 3–4 minutes, stirring occasionally, until it softens. Stir in the garlic and cook for 30 seconds, just until fragrant. Keep the heat at medium-high during this stage so the aromatics soften without releasing too much water.

Okra and Tomato Recipe: Add 2 Cups Tomatoes and Simmer for 5–8 Minutes

Add the 2 cups of chopped tomatoes, salt, black pepper, and smoked paprika, if using. Stir gently to combine without crushing the okra. Fresh tomatoes will release juice as they cook; canned tomatoes may need a tablespoon or two of water if the skillet looks dry.

Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Simmer uncovered for 5–8 minutes. Stir once or twice, using a broad spoon and lifting from the bottom rather than vigorously mixing.

Start checking at five minutes. The vegetables are ready when the okra is tender enough for a fork to enter easily, but the rounds still hold their shape and visible edges. The tomatoes should be softened and juicy, with the liquid lightly thickened. If the okra feels firm, continue simmering for another two minutes. Stop before the pods collapse or the sauce becomes watery.

Season and Serve When Tender but Still Intact

Taste the dish and adjust the salt and pepper. Add the apple cider vinegar, if desired, and stir gently. Its mild acidity brightens the tomatoes without masking the savory flavor.

Serve the okra and tomatoes hot as a side dish with rice, cornbread, grilled chicken, or beans. For the best texture, spoon the vegetables from the skillet rather than scraping vigorously, which can break the softened tomato and okra pieces.
