Warm garlic white beans: Heat 2 tablespoons olive oil in a skillet over medium heat. Add 2 sliced garlic cloves and ½ teaspoon smoked paprika; cook for 30 seconds, stopping before the garlic browns. Add 2 drained 400g cans cannellini beans, 120ml vegetable stock, and the zest of ½ lemon. Simmer for 6–8 minutes, then crush roughly one-quarter of the beans with a spoon. Tomato chickpea bulgur skillet: This one-pan dish serves four.

  • 1 tablespoon olive oil
  • 1 diced onion
  • 1 diced red bell pepper
  • 2 minced garlic cloves
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 250g coarse bulgur
  • 400g can crushed tomatoes
  • 500ml vegetable stock
  • 1 drained 400g can chickpeas
  • 60g chopped parsley and 1 tablespoon lemon juice
  1. Heat the oil in a wide, lidded skillet. Cook the onion and pepper for 6–7 minutes, until softened and lightly golden.
  2. Add garlic, tomato paste, and cumin. Stir for 1 minute, until the paste darkens slightly and smells sweet.
  3. Stir in the bulgur, crushed tomatoes, stock, chickpeas, and ½ teaspoon salt. Bring to a simmer.

Toss 1 cubed eggplant, 2 sliced peppers, 1 sliced red onion, and 250g cherry tomatoes with 2 tablespoons olive oil, 1 teaspoon dried oregano, salt, and pepper. Meanwhile, put 250g couscous in a bowl with ½ teaspoon salt. Pour over 300ml boiling vegetable stock, cover, and rest for 5 minutes. The vegetables should be browned at the edges, not steamed; use two trays if they are crowded.

Mediterranean Vegetarian Additions

For a Mediterranean vegetarian variation, add dairy or eggs only after portioning the vegan dishes:
