Fried Sweet Potato: Cut and Season 1-Inch Cubes

Cutting the sweet potatoes evenly is the key to cooking the centers before the outside becomes too dark. Peel 2 pounds of sweet potatoes, then cut them into 1-inch cubes. Pieces of this size are large enough to stay moist but small enough to cook quickly in a skillet.
