How to Roast Cabbage: Wedges or Shreds

Roast cabbage at 425°F until the edges are deeply browned and the centers are tender. Thick wedges take about 30 to 40 minutes, while thin shreds cook faster, usually in 18 to 25 minutes.

Use wedges for caramelized edges and a substantial side dish. Choose shreds when you want more browned surface area and a faster cooking time. The cut determines how you oil, arrange, and turn the cabbage.

Prepare Baked Cabbage Wedges or Shreds

For wedges, use one medium green or white cabbage, about 2 to 2½ pounds. Remove any damaged outer leaves, then cut the cabbage in half through the stem. Cut each half into four wedges, keeping a small section of the core attached so the layers hold together.

Aim for wedges about 1½ to 2 inches thick at the widest part. Very thin wedges can dry out before the center softens, while oversized wedges may stay firm inside after the edges brown.

For shredded cabbage, cut the head into quarters and remove the core. Slice each quarter into ribbons about ¼ inch wide. Thinner shreds brown quickly but can become brittle; thicker ribbons remain more substantial but may need the full cooking time.

Season and Arrange the Cabbage

Line a large, rimmed sheet pan with parchment for easier cleanup, or use the bare pan for slightly stronger browning. Heat the oven to 425°F before arranging the cabbage.

  • For eight wedges: Toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder.
  • For shredded cabbage: Toss with 1½ tablespoons olive oil, ¾ teaspoon kosher salt, ½ teaspoon black pepper, and ½ teaspoon smoked paprika.

Coat the cabbage thoroughly, including the cut sides of each wedge. Place wedges in a single layer with at least 1 inch of space between them. Set two cut sides directly against the pan, if possible.

Spread shreds in one loose, even layer. Leave small gaps between portions rather than piling the cabbage in the center. A crowded pan traps steam, producing limp cabbage with pale edges instead of crisp, browned tips. Use two pans if the shreds cannot fit without overlapping.

Roast Cabbage Wedges at 425°F for 30–40 Minutes

Place the pan on the middle oven rack. Roast the wedges for 20 minutes, then carefully turn them with a wide spatula or tongs. The underside should have started to brown and should release from the pan without tearing.

Continue roasting for 10 to 20 minutes, depending on wedge thickness and the desired color. Check after 30 minutes by inserting a thin knife into the thickest part near the core. The cabbage is ready when the knife slides in easily, the layers feel soft, and the exposed edges are browned and caramelized.

For darker edges, roast for another 3 to 5 minutes. Watch closely at the end because the thin outer leaves can burn while the core finishes softening. If the edges darken too quickly but the center remains firm, lower the pan to a lower rack and continue roasting briefly.

Oven-Roasted Shredded Cabbage at 425°F for 18–25 Minutes

For oven roasted shredded cabbage, spread the seasoned ribbons across the pan and roast for 10 minutes without stirring. This first stretch gives the bottom layer time to brown instead of simply steaming.

Stir and redistribute the cabbage, bringing darker pieces from the edges toward the center. Roast for another 8 to 15 minutes. Stir once more if the outer shreds are browning much faster than the middle.

The shreds are done when they have softened noticeably, show golden-brown to deep-brown edges, and no longer feel raw or crunchy in the thickest pieces. Some narrow ribbons may crisp, but most should remain tender. If the cabbage looks pale after 18 minutes, continue roasting in 3-minute intervals. If it is tender but not browned, spread it out more before adding additional oven time.
