How to Make Indian Rice: A Simple, Fluffy Rice Recipe

Make Indian rice with long-grain basmati, a rinse, the right water ratio, and a short rest. The result should be separate, fluffy grains that work with curries, dals, kebabs, and many other Indian rice recipes.

This method makes plain Indian rice first, then gives a few easy ways to change it. It is the best base for quick weeknight meals and easy Indian rice recipes.

Indian Rice Ingredients and Prep

For 4 servings, gather:

  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1 tablespoon ghee or neutral oil
  • 1/2 teaspoon salt, or to taste
  • 1 small bay leaf, optional
  • 2 green cardamom pods, lightly crushed, optional
  • 1 small cinnamon stick, optional

Rinse the rice in a bowl or strainer until the water runs mostly clear. This removes excess starch and helps the grains stay separate.

Soak the rice for 15 to 20 minutes if you have time. Soaking is not required, but it helps basmati cook more evenly and gives a better texture. Drain well before cooking.

How to Make Indian Rice

  1. Heat the ghee or oil in a medium saucepan over medium heat.
  2. Add the bay leaf, cardamom, and cinnamon if using. Stir for 15 to 20 seconds, just until fragrant.
  3. Add the drained rice and stir gently for 30 seconds. The grains should look glossy, not browned.
  4. Pour in the water and add the salt. Stir once.
  5. Bring to a boil, then immediately reduce the heat to low and cover tightly.
  6. Cook for 12 minutes without lifting the lid.
  7. Turn off the heat and let the rice rest, covered, for 10 minutes.
  8. Fluff with a fork before serving.

The rice is done when the grains are tender, separate, and no water is visible in the pan. If you taste a grain and it is still firm in the center, cover and cook 2 minutes more over very low heat.

If the rice seems wet after the rest, leave it uncovered for 2 to 3 minutes so steam can escape. If it seems dry or undercooked, sprinkle in 2 to 3 tablespoons of hot water, cover, and steam for a few more minutes.

Serve Indian rice with dal, butter chicken, chana masala, paneer dishes, roasted vegetables, or grilled meat. Plain basmati also works as a side for many Indian rice recipes that need a neutral base.

To make it more flavorful, try one of these simple variations:

  • Jeera rice: Add 1 teaspoon cumin seeds with the oil before the rice.
  • Onion rice: Cook 2 tablespoons finely chopped onion in the oil until pale gold, then add spices and rice.
  • Turmeric rice: Add 1/4 teaspoon turmeric with the water for a light golden color.
  • Herbed rice: Stir in chopped cilantro or mint after fluffing.

To store leftovers, cool the rice quickly, then refrigerate in a covered container for up to 4 days. Reheat with a splash of water in the microwave or in a covered pan over low heat.

For freezing, pack cooled rice in airtight containers or freezer bags for up to 2 months. Thaw in the fridge before reheating, or reheat straight from frozen with a little water.
